Food for Friday - Week 10


Hands up for Friday

I agree with her.  Time for the weekend.  This has been a very busy week thus no posting and very little cooking since last weekend.  March is a busy month at work for me.  Lots of night classes but I love it and enjoy all the wonderful people I get to share my love of teaching with.  Making a difference one student at a time....I hope!!
Tulsa is up and down in its' weather temps now but we are certainly seeing signs of spring which always lifts my spirits.
It's official.....I joined a team for the COLOR RUN on April 20th.  I haven't been able to make myself get back into "good" exercise habits since my life started unraveling over a year ago.  It's the one push I haven't made myself start again...so....I decided to start back with an easy 5K....I may walk or dance or roll in the paint all the way across town but I guarantee I am going to have fun!!  I am running with a group of young women in their 20's so I am trying to find someone in my age group to join  ( NOT going to print what that is....You who know me know the age I am talking about!!)...Call me if you are interested!!!  It is going to be a blast.  I can't wait to look like the Purple People Eater!! If there is one thing I have learned through all of this...it is that life is short and very unpredictable so....enjoy the moment when you can!!  Oh.....and to all you thousands of Tulsans out there that I have taught CPR.....if you see me down call 911 and start compressions!!  HaHa!

Food for Friday - Week 10

I love quick, easy, elegant dishes.  This recipe used the crock pot.  I made it this past weekend for friends and we all enjoyed it.  The chicken is moist and very tender.  I encourage you to give it a try.  The leftovers were just as good the next day.

Angel Chicken

Ingredients:
4 skinless, boneless, chicken breasts halves (about 1 1/2 lbs.)
1 8-oz pkg fresh button mushrooms, quartered
1 8-oz pkg fresh baby portabella mushrooms, sliced
1/4 cup butter
1 0.7-oz pkg Italian dry salad dressing mix
1 10-3/4-oz can condensed golden mushroom soup 
1/2 cup dry white wine
1/2of an 8-oz tub cream cheese spread with chives and onion
1 lb. angel hair pasta  


Method:


 




Melt butter in saucepan.
  

     








Add in Italian dressing packet, stir in soup, wine and cream cheese until it combines and melts into a sauce.









Clean and cut up the mushrooms.  Layer the mushrooms on the bottom of the slow cooker.


Season the chicken breast with salt and pepper and place on top of the mushrooms in the slow cooker.


 


Pour sauce on top of the chicken and mushrooms.  Cover and cook on low for 5 hours.




When ready to serve cook angel hair pasta according to the pkg and drain.  Layer pasta in the bottom of the bowl.  Cover with a ladle of the yummy sauce in the crockpot.  Then top with a chicken breast.  (Mine was so tender the chicken breast fell apart).  



 This recipe is would be great if you also shredded the chicken after cooking and mixed the cooked pasta into the sauce and chicken.  
It would be great to take it to a potluck.
