Food for Friday - Week 12 - Peanut Butter Chocolate Brownie Bites

Peanut Butter Chocolate Brownie Bites


Ingredients:
1 box of your favorite Brownie Mix
1/2 cup peanut butter chips
1/2 cup semi-sweet chocolate chips
3/4 cup creamy peanut butter



Preheat Oven to 350 degrees.
Spray or grease 40 mini-muffin cups
Prepare brownie mix as directed on the box.
Spoon batter evenly into the muffin cups (about 1 heaping TBLSP)
I used a small scoop to do the job!
    

 Bake for 13-15 minutes or until top is set and a toothpick inserted into the center comes out slightly wet.


 After brownies are out of oven wait for them to cool and centers to fall.  If the centers do not fall then tap the centers with the back of a spoon to make a hole for the peanut butter. Remove from pan to a tray.

Place the peanut butter in a small microwave-safe bowl.  I just use a Pyrex measuring cup.  Microwave on high for 45 seconds.

While Brownies are still warm spoon about half a teaspoon of the peanut butter into the center of each brownie.

Top with semi-sweet chocolate chips and peanut butter chips.

 
 So pretty on a pewter tray!

On a historical note yesterday, March 21, 2013, would have been my 32nd wedding anniversary.  It has been 7 months since Jeffrey lost his battle with cancer.  Instead of uncontrollable saddness I chose to remember all the blessings that Jeffrey brought into my life including two beautiful daughters, a great son-in-law and our first granddaughter, many, many fantastic friends and family to share our lives with, travel that took us all over the world, and most of all the life we shared together in both the good times and the difficult ones. Happy Anniversary Jeffrey!!  You will always be in my heart! 
P.S.  That doesn't mean I didn't shed a tear or two...just FYI!!

  1. This seems like such a trying time in some ways for you, and I can only imagine what it is like. But, I am here for you, I think of you often and wish only the best.

    While we both know this is part of the grieving process, we also both know it stinks!!!

    Oh, did make the mushroom pie for lunches, it was good. But. . . since only I eat mushrooms in this house it will be awhile before I am ready for it again. :-)
