Baking Day!!

Today I made the "30 Minute Dinner Rolls" from the Six Sister Stuff cookbook. YUMMM!!! I baked mine in a glass pie dish which made the cooking time longer.....about 25-30 minutes. They were easy to mix together. I used my Kitchenaid mixer. I slathered the tops with melted butter which added to the deliciousness. They were soft and warm....light and airy!!! I would encourage anyone who is afraid of yeast dough to try this....just remember to use WARM water ....not HOT!!!

30 Minute Rolls Recipe:

Ingredients:
1 c. plus 2 Tbl. warm water
1/3 c. vegetable oil
2 Tbl. active dry yeast (yes, you read that right! 2 tablespoons!)
1/4 c. sugar
1/2 tsp. salt
1 egg
3 1/2 c. all-purpose flour

Directions:
Preheat oven to 400 degrees. In the bowl of a stand mixer, combine warm water, oil, yeast and sugar; let rest for 5-10 minutes or until frothy and bubbly. With a dough hook, mix in salt, egg and 2 cups of flour until combined. Add remaining 1/2 cup flour at a time (dough will be sticky). Spray your hands with cooking spray and shape the dough into 12 balls. After shaped, place on lightly greased cookie sheet and let rest for 10 minutes. Bake for about 10 minutes or until tops are lightly golden. Yield: 12 good-sized rolls. You can also use this same dough for cinnamon rolls!

I am baking for my annual Cookie trays each day as I get the time. Yesterday I made these White Chocolate Cranberry Bars.


White Chocolate Cranberry Blondies Recipe

TOTAL TIME: Prep: 35 min. Bake: 20 min. + cooling MAKES: 30 servings

Ingredients:

3/4 cup butter, cubed

1-1/2 cups packed light brown sugar

2 Eggs

3/4 teaspoon vanilla extract

2-1/4 cups all-purpose flour

1-1/2 teaspoons baking powder

1/4 teaspoon salt

1/8 teaspoon ground cinnamon

1/2 cup dried cranberries

6 ounces white baking chocolate, coarsely chopped

FROSTING:

1 package (8 ounces) cream cheese, softened

1 cup confectioners' sugar

1 tablespoon grated orange peel, optional

6 ounces white baking chocolate, melted

1/2 cup dried cranberries, chopped

Directions:

In a microwave, melt butter; stir in brown sugar. Transfer to a large bowl; cool to room temperature. Beat in eggs and vanilla. Combine the flour, baking powder, salt and cinnamon; gradually add to butter mixture. Stir in cranberries and chopped chocolate (batter will be thick).

Spread into a greased 13-in. x 9-in. baking dish. Bake at 350° for 18-21 minutes or until a toothpick inserted near the center comes out clean (do not overbake). Cool on a wire rack.

For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and orange peel if desired until blended. Gradually add half of the melted white chocolate; beat until blended. Frost brownies. Sprinkle with cranberries. Drizzle with remaining melted white chocolate. Cut into bars. Store in the refrigerator. Yield: 2-1/2 dozen.

I cut the squares into diamond shapes for a "fancier" presentation. These bar cookies are soft and moist and lend themselves to a Hot cup of tea!!!

  1. Oh my these things look delicious...and I'm waiting for hubby to get home with Wendy's take-out for dinner before we head to our sons piano recital. Wendy's is not going to taste as good after seeing the yeast rolls and the cranberry bars - two of my favorite things!
