Chinese Chicken Salad

Well.....it has been over 2 years since my last post!   To say the least a lot has happened  in my life
Suffice to say that in two years everyone has change......ups and downs.....but all in all I am blessed and still cooking and quilting!!!!   In fact it is by popular demand from the girls in my Wagoner quilt group that I am posting this Chinese Chicken Salad Recipe.  We had our monthly meeting Saturday and I made this salad to share with the group.   I don’t have a pix to share.....we ate it all before they ask me to post it!!!

Chinese Chicken Salad

1 large bag of Cole slaw mix (Sam’s) or two small bags
2 pkgs of Chicken Ramen
1 cucumber sliced into half moons
1 cup of sliced celery 
1  bag of frozen shelled Edamame (Target)
1 bunch of green onions sliced thinly on the bias
1 large can of Mandarin oranges drained
2-4 cups of shredded cooked chicken.  ( I use rotisserie chicken)
1 cup of slivered almonds 
1/4 cup of sesame seeds
2TBSP Everything bagel seasoning 
1 cup of  Canola oil
6 TBSP red wine vinegar

Salad body:
Mix together and toss:
Slaw mix
Green onions
Cucumbers
Celery 
Elamame
Mandarin oranges
Chicken

Salad dressing:
Open ramen packages and remove the seasoning packets.
In a mason jar add:
Oil 
Red wine vinegar 
Everything Bagel seasoning
2 packets of Ramen seasoning from the noodle packages
Shake to mix!

Noodle, nut and Seed topping:
Coarsely crush the noodles from the packages  and place in a large skillet.
Add sesame seeds, almonds, and Everything Bagel seasonings.
Toast till light brown.  Watch carefully.  It will burn very quickly!
Cool the nut, noodle and seed mixture

To serve:
If consuming the entire salad in one day mix the 
Salad body, dressing and toasted mixture together .    I don’t use the entire bottle of dressing.  You can dress to your taste!  
If serving in small portions I keep all the parts separate and only mix to taste and portion when eating.  
You can be creative and add or take away ingredients to suit your taste!
