Snowflakes and Smiles!! Candy Bar Bites!!

The preparation for my White Christmas is beginning to happen in Minneapolis, MN where the snow is falling!! Miss Ella saw her first real snowflakes today!! She is smiling so I hope that means she likes the snow as much as her Nana does!!

The wonder of it all through the eyes of a child is magic!!

It's beginning to look a lot like Christmas!!!!



As promised I will share Phase II of the Mtn Mama Candy Making Experience today!! I am so proud of myself for blogging two days in a row. I'd better not set the bar too high..... but I can always crawl under it if I fall behind again! HaHa!!



Mounds and Almond Joy Candy Bar Bites

2 1/2 cups of dried Coconut

3/4 cup light Corn Syrup

pinch of salt

Whole Almonds (unsalted)

Almond Bark ( dark) for coating

First of all it is VERY important you use the RIGHT Coconut or the candy will not be the right consistency.

I buy this coconut at Akin's which is a Health Food Store. It is a natural, dehydrated coconut found packaged in the cooler section. It is cut very short and fine and is unsweetened. It is also more expensive than the bag at the grocery store. Very few times will you see me say NO Substitutions but this is one of those times.........NO SUBSTITUTIONS for the coconut.

Place the corn syrup and salt in a saucepan and bring to a quick hot. Not a boil....just to where small bubbles form around the edges.

Remove from the heat and mix in coconut.

Place the mixture into the refrigerator for 1 hour to cool and firm up.

Remove from the frig and make small oval bite size bars.... these are the Mounds bites. Place a whole unsalted almond on top of half the bites....this makes the Almond Joy Bites. Remember the jingle????

Sometimes you feel like a nut......Sometimes you don't!! Am I showing my age???





Melt your chocolate coating (I used almond bark) in small microwave safe cups just like we did with the Chocolate Caramel Candies . See previous blog for details. Coat each of the little candy bar bites with the chocolate.

The finished product ready for tasting. If you can wait that long....I think I already tasted one before the picture was taken!!

I pack my candy in plastic containers and store in the frid until time for gift giving or....EATING!! These candy bar bites are the best!!
