Signs of Spring

 Today I headed to the lake after church to check on the house and make sure everything is good.  I haven't had time to go since January.   It's about an hour southeast of Tulsa. I love it down there but it has been very hard for me to go since Jeff died.  We had such fun there for so many years. We had a blast with our girls skiing, sea-doing and boating while they were growing up.  I am so thankful for my memories...but right now they still hurt.  This weekend has been cold and dreary.  We got a little bit of rain Saturday evening...not much. We are still in a drought and will take any moisture we can get.  I took my my best buddy, Riley, with me.  He loves to ride in the car....only trouble is he wants to lay his head on my lap while I am driving and he moves the gear shift into low as he leans toward me.  We will have to work on that!  As we were walking into the house I looked by the sidewalk to the porch and saw that my daffodils and grape hyacinths were in bloom.  What a surprise to see such beauty on such a cold, gray day.  I picked a few to bring home to remind me that spring is on its' way!!

Seems like ages since I finished any sewing projects.  I am going to put the Dresden Plates away for awhile.  I think they make me sad because of all the memories associated with them and Jeff's illness last spring/summer.    I really have been blessed with lots of company and family over the past few weeks....which is great!!   I would rather spend my time with those I love than with my sewing machines.
I am fortunate to have so many people concerned and checking on me during this "Dark Night of the Soul".   This week I work a lot plus I am "spring" cleaning and trying to get through my closet and see what fits and what doesn't.  I guess grief affects everyone differently but apparently I don't eat or sleep very much.  I have gone down two sizes since August without trying. A blessing and a curse!!  Now I have to get some pants that fit!!  Haha!!  Enough of that...(Can you tell I need some sunshine.....Tulsan's get cranky  (or sad) when we have more than two gray days in a row!!!)
Last night I had guests for dinner and made BBQ with of all things...Root Beer!!!  Wanna see how I did it???

 

Root Beer Pulled Pork

Ingredients:

2 pork Tenderloins 

1 medium onion, chopped

2 cloves of garlic, minced

BBQ Spice Rub (you can find my recipe here .)

2 cups Root Beer

2 cups BBQ sauce ( whatever you like)

Directions:

 

 

1. Remove Pork tenderloin from the package.  Remove the silver skin and trim fat.  

 

  

 

 

 

 

 

 

2.  Place the cleaned mean on a plate and season with the BBQ dry rub mix.

 


4.  Chop the medium onion and garlic.
 

 

   4. Place the onion and garlic on the bottom of the slow cooker and top with the seasoned pork.  Pour Root Beer over the meat.


 

 

  5.  Cover the crock-pot and cook on LOW until well cooked and pork shreds easily.  8-10 hours usually.

 

 

    

 

6.  Drain well and discard the extra root beer.  I used two forks to shred the meat. 

 

7.  Stir in the BBQ sauce after pulling the pork.  Cook on low for another hour till the BBQ sauce heats through the meat.

 

 

 

 

 
In West Virginia I grew up eating my BBQ with slaw.  Tasty and ohhhhhhhh so good.  I made oven baked white and sweet potato fries to complete our meal.  It was a great Saturday night Supper!!

  1. Your stash numbers look good for the year. Your pulled pork stanwich looks even better! Thanks for the recipe. I am going to try it real soon. I have been hungering for some good pulled pork and this looks so easy. Can you freeze the leftovers? There are only two of us and I'm sure this will make way more than enough for one meal.

  2. Even during the "Dark Night of the Soul" there are glimpses of the wondrous flowers--sent to us through friends and loved ones--and through the beauty of the actual daffodils and hyacinths.

  3. Oh Sue, I am ALWAYS up for trying a new pulled pork recipe! We top ours with cole slaw too! My mom makes great cole slaw! What's YOUR secret! I use an old Kentucky Fried Chicken recipe with the sugar cut WAY down. Glad that some flowers revealed themselve to you! Promise of spring, promise of salvation, promise of always being with you........

  5. Always a yummy recipe. Looks great. Your Riley sounds like Daisy. One of her nicknames is 'Velcro' she has to always be touching me. I am sure if she rode in the front seat she would be 'touching me'. BTW have you nominated Riley for Daisy's award? Go by the blog.
