The Magic of Snow......
Don't you just love snow.... snowflakes, snowballs, snowmen....It's all made with wonderful snow.I spent the day home in "Snow Hibernation". I baked cinnamon rolls and then gave pans to all my neighbors.
What could be better than warm cinnamon rolls on a cold snowy day???
For Dinner I made Navy Bean Soup and Cornbread. Just hit the spot on a cold wintery evening.
Navy Bean Soup
Ingredients:1 lb navy beans, washed and soaked overnight.
2 stalks celery minced
1 onion minced
2 carrots minced
2 quarts chicken broth
Method:
1. Drain the water off of the beans from the soaking.
3. Mince the carrots and celery.
4. Saute the celery, onions and celery in 2 TBSP of Olive Oil
5. When the veggies are soft, about 5-7 minutes.
6. Add the beans to the veggies
7. Mix the beans and the veggies together in the soup pot.
8. Add 2 quarts of chicken stock to the beanpot.
Bring to a boil, then reduce to a simmer. Cover and cook on simmer for 1 1/2 to two hours.
Serve with cornbread and a green salad for a warm, comforting, filling meal on a cold snowy evening.
